Fermentation: Blend of 1 year-old Tilquin lambics (1/8) and Rulles brown (7/8), matured 8 months in oak barrels after blending. Then 6 months of refermentation in the bottle.

The Brewery: Collaboration between the Rulles brewery and the Tilquin brewery. The Gueuzerie Tilquin is the only gueuzerie in Wallonia. Founded in 2009 by Pierre Tilquin. The craft brewery in Rulles was founded in 2000 by Grégory Verhelst.

Food: It goes perfectly with grilled meats, fish in sauce but also with chocolate!

    Boundry Breaking Beer

Posted by Timothy Smith on 18th Feb 2021

A very provocative beer that certainly breaks the mold and explores new boundaries. The lambic is well expressed and in many ways does seem to complement the stout. The body and finish definitely feel more like a lambic than stout and the more fruit-forward citrus acidity is puzzling. The important thing is that it's an enjoyable beer!
