Style and Colour: Blond beer
Taste: A dry farmhouse beer with lemony notes.
Alcohol: 6.8 % ABV
Drinking Temperature: 4-6° C
Fermentation: Fermented at 40C in a cask with Kveik Voss yeast, then aged in barrels with different strains of Brettanomyces for 18 months. Refermented in the bottle.
The Brewery: Brewery L'Apaisée founded in 2015 in Geneva by Xavier Righetti. Making beer is also a way to return to a more manual and less stressful activity, away from computer screens. The name L'Apaisée (meaning "relaxed") had it all.
Food: Excellent as an aperitif
