Style and Colour: A blend of different beers aged in barrels.
Taste: Dry taste (almost no residual sugar) but still has a roundness due to the tannins of the barrel. Amber colour from the caramelised malts. Moderate acidity.
Alcohol: 7 % ABV
Drinking Temperature: 8 - 10° C
Fermentation: A blend aged between one and a half and three years in barrel, fermented with wild yeast and bacteria isolated from a wasp's intestine. It undergoes a refermentation in the bottle.
The Brewery: Brewery L'Apaisée founded in 2015 in Geneva by Xavier Righetti. Making beer is also a way to return to a more manual and less stressful activity, away from computer screens. The name L'Apaisée (meaning "relaxed") had it all.
Origin: Coetus means assembly in Latin.
Food: Excellent as an aperitif.
