Style and Colour: Spontaneous fermentation beer with dry hopping.
Taste: Subtle alliance between the acidity coming from the spontaneous fermentation and the bitterness due to the use of fresh hops.
Alcohol: 6.5 % ABV
Drinking Temperature: 12 - 15 ° C
Fermentation: Aged for two years in barrels, the beer is supplemented again with fresh hops two weeks before bottling. This technique, known as dry hopping, intensifies the flavour of the beer and makes it more bitter on the nose and in the mouth.
The Brewery: Cantillon is a traditional lambic brewer and blender located in Anderlecht Brussels, founded in 1900 by Cantillon family. Since 1970, it is owned and led by Jean-Pierre Van Roy.
Origin: Lambic is a type of beer brewed in the Pajottenland region of Belgium southwest of Brussels. It is fermented through exposure to wild yeasts and bacteria. The name "Iris" comes from the "marsh iris", a plant that grows in wetlands in the historic centre of Brussels (built on marshland) and has become the symbol of the city of Brussels.
