Preparation time: 20 min.
Cooking time: 45 min
Ingredients:
1 nice large squash (to be used as a soup tureen)
1 potimaron
4 shallots
20cl La Moneuse amber beer
2 cloves of garlic
salt and pepper
Steps:
1. Cut the top of the large squash to keep a bottom that will serve as a soup tureen, and remove all seeds from it.
2. Empty the flesh of the large squash with a spoon and place it in a covered saucepan in a bottom of water (the water should just cover the vegetable pieces).
3. Add the potimaron (emptied of its seeds) cut into pieces.
4. Add the shallots and garlic cloves cut into pieces.
5. Leave the leather in the covered pan over medium heat for 40 min.
6. Mix together until a thick and creamy soup is obtained.
7. Season with salt and pepper.
8. Add the amber beer La Moneuse and simmer 5 min over low heat.
9. Stir well.
10. Serve the soup in the large squash previously hollowed out.
Enjoy your meal and good tasting!
This soup can also be enjoyed by children because the alcohol in the beer has evaporated, leaving only the malty and fruity flavours.
PS: the rest of the 75cl bottle of Moneuse can be drunk as an aperitif, or with a meal.
